It is almost the end of winter in the Western Cape.
Cape Town is known for its winter rainfall and with summer lurking, everybody is gearing up for the outdoor FUN-time and because we are situated in the Cape Winelands, a glass of good wine is always a great match for the perfect pizza.

See our preferred pizza self-make dough recipe that you can use with confidence and ease. After you roll the pizza bases, pre-bake it for approximately 30-45 seconds in a preheated CADDY or in a conventional oven. This will make your life a lot easier when you prepare and bake your pizzas
HOW TO MAKE THE PIZZA DOUGH MIX
4 ½ cups white bread flour + extra for surface and dusting
10g sachet fast-action yeast
⅔ cup lukewarm water
½ teaspoon salt
½ teaspoon sugar (optional)
1 tablespoon olive oil
Sift the flour into a large mixing bowl, then stir in the yeast and salt / sugar. Make a well in the centre and add the olive oil and lukewarm water.
Start bringing the dough together use your hands to incorporate any stray bits of flour. You may need a few more drops of water to ensure you get all the flour from the bowl.
Tip the dough onto a lightly floured surface and knead for 5 minutes until it’s smooth and springy.
Wipe the bowl clean, then rub well with oil.
Put the dough back in, then cover the bowl with a lightly oiled piece of clingwrap.
Place bowl in a warm place for about 1 hour
Sprinkle more flour onto the counter and knead the dough again briefly. Divide into 4 pieces.
Roll out the dough into circles, about ½ cm thick, and put onto an aluminium perforated pizza pan
Always use warm, not hot water.
Using fast action yeast is best as you can add it straight to the dough. Just be sure to check the use-by-date to make sure it’s still active.
For deliciously crisp pizzas, make sure they go into a very hot oven on a preheated baking tray
If I know we will be a large group I prepare my dough & prebake pizzas bases beforehand & seal it. They do freeze well
